I wish I could get into the more heavily spiced beers, but that's the one genre (along with pilsners, blech) that I just can't get into. Tripels and the like taste gross to me

I like the majority of tripels. The only that I can't really get into are the ones that are heavy on the candied sugar that leave you with a cloying sweetness in your mouth. La Fin Du Monde breaks the tripel mold quite nicely with a nice dry finish, almost peppery like a saison but with the floral/fruity notes you'd expect in a tripel. An exquisite beer.

ST Double Chokolat Stout was terrific. Dessert caliber, to be sure, prob wouldn't want more than one BB at a sitting. But really nice chocolate, managed a hint of vanilla, very smooth.

I'm not sure that I would recommend having more than one, if you have to be somewhere the next day.
At least that's what my intestines would tell you.

A /csb on this topic, our office takes off the week between Christmas and New Years. During that week this year I drank new yeasty beers every day. My wife did not want me in the house.

The Hennepin was rockin.
It seemed to have a touch of sour in the aftertaste, which I definitely liked.

Just tried this year's Sierra Nevada Ruthless Rye IPA...delicious stuff. Has that up-front spiciness (not in the tripel sense) that I love about Sierra Nevada.

Yeah, I find the funk on it to vary a good bit, relatively speaking (some stuff is really consistent). I just love that pepperiness and crisp finish. Its definitely one of the best American (straightforward) saisons.

Most beer has hops. Some styles (like IPA) are more aggressively hopped. That bitter bite is hops.

Sierra Pale Ale is one of my go to summer beers if I'm just getting a six pack of something. However, their other stuff is hit or miss.

Just an FYI, Bocktown in Robinson has a New Holland tasting tonight from 6-8. They have Blue Sunday Sour, Envious, Poet, and Dragons Milk on tap. I'm not a Sour fan but I know some are, figured I'd get the word out.

Used this last weekend for the first time. I had a Bell's Golden Rye. I definitely changes the bite of the hops and makes the beer smoother. Although, the end of the beer seemed a bit more skunky than usual, and i'm pretty sure i wasn't nursing it that long. I only drank one, so maybe that's just a sample size issue.

Well, the level of filtering certainly varies quite a bit. There's plenty of "bottle conditioned" beers that have no real visible yeast sediment, and a lot that don't have the level you'd find in belgians.

The amount of visible sediment in the beer will have to do with the clearing agents that were used (Irish Moss, Gelatin is what homebrewers use, not sure about the breweries). The yeast is still unfiltered for bottle conditioning but the beer will appear a lot clearer.
