Godric, are you good with Italian cooking? Some of the best summery Italian inspired dishes I've had are mostly vegan. Spaghetti squash is great. You could do some eggplant parm minus the parmesean cheese (I know, I know). Nothing gets a house smelling better than freshly baked bread, so you could do that. There are plenty of options. One thing I learned about cooking for people with dietary needs (I have an ex that was allergic to wheat, soy AND dairy) is Google should be your best friend.

Vegan ricotta is pretty easy:

tofu
olive oil
various spices
(maybe a touch of lemon juice?)

Stir until the consistency of the original. It's good in lasagna.

Just be careful, Godric. I can't really speak about vegans, but my wife is a vegetarian and, when I met her, I was most certainly NOT a vegetarian.

But I love to cook and so did all of the cooking, and all of it was of course vegetarian. I only ate meat when we went out.

With no pressure whatsoever from her, within three years I realized that I just didn't miss meat. I converted. Since then, I have become slightly more radicalized about vegetarianism, but at the start it was just the fact that I didn't miss meat.

This kind of thing happened with my brother, he even took it a step further and went completely vegan. The only thing he said he missed was cheese. You can find solid replacements for meat, but not much with cheese.

My ricotta post aside, I wouldn't bother with any of those processed fake cheeses.
They DON'T taste anything like real cheese. Hell, even rennet-free cheese doesn't taste like the real thing.

My meat loving friend married a girl from India, he went full vegan, and is to the point now where he will gently try to catch a fly and let it outside instead of using the swatter.

If I can't say I am good with Italian cooking then I can't say I'm good with cooking :lol:

Spaghetti Squash is definitely in the lead right now. That was one of the first things I found :thumb: ... Eggplant Parm, Man... I would die a little inside if I had to make it without Fontinella and parm cheese

I didn't think of baking bread! Thats an awesome idea.

Only issue is I don't eat soy.... or atleast I try very hard to not eat soy and I don't want to serve something that I'm not going to thoroughly enjoy

I decided that I was gonna grill some portos on this fine day with a nice foil of zuc/squash on the side. Brightwire me decides to slice up a scotch bonnet and throw in the foil.
step 2: scratch the nose
step 3: its been a good half hour of nose running and numbness with a side of burning. Yippee skippee

Beer Bread

3 cups flour
1/4 cup sugar
3 tsp baking powder
1 tsp salt
12 oz beer
4 tbsp melted butter

Mix dry ingredients, then mix in beer...don't overmix.
Pour batter into greased loaf pan, drizzle melted butter over batter. Bake for 1 hour in preheated 375 degree oven.

Delicious.

Yeah, but you're tougher for it now.

We had a ghost chile contest two years ago at work. 1 hour to see who could take the most hits of a ghost chile extract, each drop about half the size of a pinky fingernail. I finished in a three-way tie (out of nine 'competitors') with two hits. In 1 hour. I ate an entire pint of B&J ice cream after, and it just made me sick. Terrible experience.
